Rum and Coke Roasted Chicken

  • 1 whole chicken
  • ¼ c. lime juice
  • 4 oz. dark rum
  • 2 Tbsp olive oil
  • 2 Tbsp soy sauce
  • 2-4 cloves garlic, minced
  • ½ tsp ground cinnamon
  • ½ tsp ground ginger
  • 1 tsp hot sauce
  • 1 can cola


  1. Combine 1oz rum, lime juice, olive oil, soy sauce, garlic, cinnamon, ginger and hot sauce in a small bowl.  
  2. Cover chicken with marinade and refrigerate for a minimum 1 hour.  
  3. Preheat the oven to 400F.
  4. Reserve half the can of cola, and place the can in the center of a deep baking dish.
  5. Position the chicken over the can, sitting on its legs.
  6. Pour half the remaining rum and cola in the bottom of the dish.
  7. Roast chicken in the oven for 30 minutes.
  8. Add the remaining rum and cola, basting the chicken.
  9. Reduce heat to 350F and roast until the juices of the chicken run clear, about 30 minutes.  
  10. Remove from the oven, discard the pop can and serve.
